Ich kann mich nicht erinnern, jemals Pflaumenkompott gegessen zu haben. Apfel, ja. Pfirsich auch. Aber keine Pflaumen. Und doch überkam mich dieser Drang, dringend, wirklich ganz dringend, Pflaumenkompott zu machen.
I can’t recall ever having plum compote. Apple, yes. Peach, too. But no plums. And still I had this urge, a really urgent urge, to make plum compote.
Bis auf Pflaumen und Zucker, vielleicht noch Zimt, hatte ich keine Ahnung und habe mich ein bisschen im Netz umgesehen, hier und da, und eins schien klar: da gehört Rotwein rein. Wäre ich nie drauf gekommen. Jetzt ein Outing: ich trinke keinen Wein. Aber das wäre ja eine interessante Variante meinen „Keller“ zu leeren.
Plums, sugar and cinnamon maybe… but what else? I did’t have a clue and began surfing the net and one thing seemed to be obvious to everybody and everywhere I looked: you need red wine. I would never have thought of that because, this is my coming out: I don’t drink wine. But this would sure take care of my ever expanding „cellar“.
Eine Idee von hier, eine andere von dort und ich kam zu meinem eigenen Rezept:
2 kg Pflaumen
3 Äpfel
gut 500g Zucker
2 großzügig gehäufte TL Zimt
1 Päckchen Vanillezucker
2 Päckchen Bourbon-Vanillezucker
… und Rotwein. Eine Flasche.
Erst den Zucker karamellisieren (wäre ich auch nicht drauf gekommen – Karamell gehört auch nicht zu meinen Lieblingsgeschmacksrichtungen), dann mit dem Rotwein ablöschen und rühren, rühren, rühren. Die entkernten und geviertelten Pflaumen dazu und auch die geschälten, entkernten und in kleine Würfel geschnittenen Äpfel. Den Zimt und den Vanillezucker dazugeben, umrühren und bei mittlerer Hitze ewig kochen. Sicherstellen, dass du nicht genügend Gläser hast, damit du direkt ordentlich probieren kannst… ich hätte mich reinlegen können. Dazu vielleicht Eis, Pfannkuchen, Waffeln…
I looked a bit here and a bit there and everywhere and then came up with my own recipe:
2kg / 4.4lbs plums
3 apples
500+g / 1.1 lbs sugar
2 generously heaped tsp. cinnamon
1 package (2 tsp.) vanilla sugar
2 packages (4 tsp.) bourbon vanilla sugar
… and red wine. One bottle of it.
First caramelize the sugar (wouldn’t have thought of that either – toffee is not one of my favorites), deglaze with the red wine and stir, stir, stir. Add the pitted and quartered plums as well as the peeled, pitted and diced apples. Then add the cinnamon and the vanilla sugar(s), stir and cook forever over medium heat. Make sure you don’t have enough jars so you have reason to try plenty… I wanted to drown in it. Have it with ice cream, pancakes, waffles…
Ich hoffe, der schön vor sich hin brubbelnde Kompott ist auch gut zu erkennen, denn er soll außerdem noch der deutsche Beitrag zum Stichwort „Bubbles“ bei Our Beautiful World diese Woche werden. Gar nicht so einfach, ein Foto zu machen, wenn die Linse ständig vernebelt ist.
